Technique

Rim

To rim a glass is to coat its edge with salt, sugar or another garnish, so each sip picks up a little of it.

In practice

Run a lime or lemon wedge around the outside edge, then roll the edge in salt or sugar on a small plate. Coating only the outside keeps it out of the drink. A half rim lets the drinker choose. The Margarita is the best-known salt-rimmed cocktail.
