How to make a Lassi Khara

To make a Lassi Khara, blend with ice and pour into a highball glass: 8 oz yoghurt, 16 oz water and 1 dash asafoetida. Garnish with salt.

    Rim the glass: run a lime or lemon wedge around the outside edge, then roll the edge in salt on a small plate.

    Add yoghurt, water and asafoetida to a blender with about a cup of ice.

    Blend until smooth, about 20-30 seconds (add a little more ice if you want it thicker).

    Pour into a highball glass.

Why blend? Blending yoghurt and water with ice gives a smooth, frozen texture.
