How to make a Lassi Raita

To make a Lassi Raita, blend with ice and pour into a highball glass: 16 oz yoghurt and ¼ oz simple syrup. Garnish with lime and salt.

Instructions

    Rim the glass: run a lime or lemon wedge around the outside edge, then roll the edge in salt on a small plate.

    Add yoghurt and simple syrup to a blender with about a cup of ice.

    Blend until smooth, about 20-30 seconds (add a little more ice if you want it thicker).

    Pour into a highball glass.

    Garnish with a lime wheel.

Why blend? Blending yoghurt and simple syrup with ice gives a smooth, frozen texture.

No simple syrup? Blend in 1 tsp sugar instead.
