Double strain

To double strain is to pour a shaken drink through the shaker's strainer and a small fine-mesh sieve at the same time, catching ice chips, pulp and herb bits.

In practice

Hold a tea strainer or fine sieve over the glass and pour through it as you strain from the shaker. It matters most for drinks served up with no ice, for anything with muddled herbs or fruit, and for egg-white sours where you want a smooth foam.
