How to make a Porto Flip

To make a Porto Flip, shake with ice and strain into a cocktail glass: ⅔ oz brandy, 2 oz port and ½ oz egg yolk.

    Chill a cocktail glass: fill it with ice and water while you mix, then tip it out.

    Add brandy, port and egg yolk to a cocktail shaker.

    Shake hard without ice for about 10 seconds to whip the egg.

    Add ice to the shaker.

    Shake again for 10-15 seconds, until the shaker feels very cold.

    Strain into the chilled cocktail glass.

Why shake? The egg yolk needs a dry shake first to turn silky.
