How to make a Boxcar

To make a Boxcar, shake with ice and strain into a sour glass: 1½ oz gin, 1 oz Triple sec, ¼ oz lemon juice, 3 dashes grenadine and 1 egg white.

    Chill a sour glass: fill it with ice and water while you mix, then tip it out.

    Add gin, triple sec, lemon juice, grenadine and egg white to a cocktail shaker.

    Shake hard without ice for about 10 seconds to whip the egg.

    Add ice to the shaker.

    Shake again for 10-15 seconds, until the shaker feels very cold.

    Strain into the chilled sour glass.

Why shake? Lemon juice needs a hard shake to mix and chill properly; the egg white needs a dry shake first to turn silky.
