How to make an Ace

To make an Ace, shake with ice and strain into a cocktail glass: 3 oz gin, ¾ oz grenadine, ¾ oz heavy cream, ¾ oz milk and ½ oz egg white.

    Chill a cocktail glass: fill it with ice and water while you mix, then tip it out.

    Add gin, grenadine, heavy cream, milk and egg white to a cocktail shaker.

    Shake hard without ice for about 10 seconds to whip the egg.

    Add ice to the shaker.

    Shake again for 10-15 seconds, until the shaker feels very cold.

    Strain into the chilled cocktail glass.

Why shake? Heavy cream and milk blends in smoothly only with a hard shake; the egg white needs a dry shake first to turn silky.
