How to make a Captain Kidd's Punch

To make a Captain Kidd's Punch, shake with ice and strain into a highball glass: 3 oz rum, 1½ oz lime juice, 1½ oz egg white, 1 dash Bitters, ¼ oz simple syrup and nutmeg.

    Add rum, lime juice, egg white, bitters and simple syrup to a cocktail shaker.

    Shake hard without ice for about 10 seconds to whip the egg.

    Add ice to the shaker.

    Shake again for 10-15 seconds, until the shaker feels very cold.

    Strain into a highball glass filled with fresh ice cubes.

    Top with nutmeg.

    Give it one gentle stir.

Why shake? Lime juice needs a hard shake to mix and chill properly; the egg white needs a dry shake first to turn silky.

No simple syrup? Muddle 1 tsp sugar with the bitters and a splash of water in the shaker until it dissolves, then carry on.
