How to make a Daiquiri
To make a Daiquiri, shake with ice and strain into a coupe: 1½ oz light rum, ½ oz lime and ¼ oz simple syrup.

Chill a coupe: fill it with ice and water while you mix, then tip it out.

Add light rum, lime juice and simple syrup to a cocktail shaker.

Fill the shaker with ice.

Shake hard for 10-15 seconds, until the outside is frosty.

Strain into the chilled coupe.
Why shake? Lime juice needs a hard shake to mix and chill properly.
No simple syrup? Muddle 1 tsp sugar with a splash of water in the shaker until it dissolves, then carry on.
