How to make a Vesuvio
To make a Vesuvio, shake with ice and strain into a rocks glass: 1 oz light rum, ½ oz sweet vermouth, ¾ oz lemon, ¼ oz simple syrup and 1 egg white.

- Simple syrupor 1 tsp sugar + a splash of water¼ oz
- Egg white1

Instructions

Add light rum, sweet vermouth, lemon juice, simple syrup and egg white to a cocktail shaker.

Shake hard without ice for about 10 seconds to whip the egg.

Add ice to the shaker.

Shake again for 10-15 seconds, until the shaker feels very cold.

Strain into a rocks glass filled with fresh ice cubes.
Why shake? Lemon juice needs a hard shake to mix and chill properly; the egg white needs a dry shake first to turn silky.
No simple syrup? Muddle 1 tsp sugar with a splash of water in the shaker until it dissolves, then carry on.
