How to make an Acapulco

To make an Acapulco, shake with ice and strain into a rocks glass: 1½ oz light rum, ¼ oz Triple sec, ½ oz lime juice, ¼ oz simple syrup, 1 egg white and 1 mint.

    Add mint leaves and simple syrup to a cocktail shaker and press gently with a muddler or the end of a wooden spoon to release the oils and juice.

    Add light rum, triple sec, lime juice and egg white to the shaker.

    Shake hard without ice for about 10 seconds to whip the egg.

    Add ice to the shaker.

    Shake again for 10-15 seconds, until the shaker feels very cold.

    Strain into a rocks glass filled with fresh ice cubes.

Why shake? Lime juice needs a hard shake to mix and chill properly; the egg white needs a dry shake first to turn silky.

No simple syrup? Muddle 1 tsp sugar in with the mint leaves instead.
