Bitters
Bitters are strong, concentrated flavorings made by steeping herbs, roots, bark and spices in alcohol, added to cocktails a few dashes at a time.
In practice
Angostura is the best known, with Peychaud's and orange bitters close behind. A couple of dashes ties a drink together, much like salt in cooking. They're in the Old Fashioned, Manhattan and Sazerac. Bitters contain alcohol, so check labels if you avoid it.
