Instructions
- 1
Chill a coupe: fill it with ice and water while you mix, then tip it out.
- 2
Add sherry, light cream, simple syrup, egg and nutmeg to a cocktail shaker.
- 3
Shake hard without ice for about 10 seconds to whip the egg.
- 4
Add ice to the shaker.
- 5
Shake again for 10-15 seconds, until the shaker feels very cold.
- 6
Strain into the chilled coupe.
Why shake? Light cream blends in smoothly only with a hard shake; the egg needs a dry shake first to turn silky.
No simple syrup? Muddle 1 tsp sugar with a splash of water in the shaker until it dissolves, then carry on.

Both use sherry, light cream, simple syrup, egg and nutmeg. Both are shaken, but the Sherry Flip goes in a coupe and the Sherry Eggnog in a highball glass.
Should a Sherry Flip be shaken or stirred?
Shaken: light cream, simple syrup and egg white need a hard shake to mix and chill properly. Dry-shake without ice first for a thicker foam.
