How to make a Port Wine Flip
To make a Port Wine Flip, shake with ice and strain into a sour glass: 1½ oz port, ⅓ oz light cream, ¼ oz simple syrup, 1 whole egg and 1 nutmeg.

Chill a sour glass: fill it with ice and water while you mix, then tip it out.

Add port, light cream, simple syrup, egg and nutmeg to a cocktail shaker.

Shake hard without ice for about 10 seconds to whip the egg.

Add ice to the shaker.

Shake again for 10-15 seconds, until the shaker feels very cold.

Strain into the chilled sour glass.
Why shake? Light cream blends in smoothly only with a hard shake; the egg needs a dry shake first to turn silky.
No simple syrup? Muddle 1 tsp sugar with a splash of water in the shaker until it dissolves, then carry on.
