In practice
A Virgin Mojito keeps the lime, mint, sugar and soda and drops the rum; a Virgin Piña Colada is just pineapple, coconut cream and ice. You'll also see these called mocktails or alcohol-free cocktails. Bitters and some syrups can contain alcohol, so check the labels if that matters to you.
