How to make an Aviation
To make an Aviation, shake with ice and strain into a coupe: 1½ oz gin, ½ oz lemon juice and ½ oz maraschino liqueur.

Chill a coupe: fill it with ice and water while you mix, then tip it out.

Add gin, lemon juice and maraschino liqueur to a cocktail shaker.

Fill the shaker with ice.

Shake hard for 10-15 seconds, until the outside is frosty.

Strain into the chilled coupe.
Why shake? Lemon juice needs a hard shake to mix and chill properly.
