Basics

Simple syrup

Simple syrup is sugar dissolved in water, usually equal parts by volume, used to sweeten cocktails because it mixes in instantly, unlike granulated sugar.

  • Also: Sugar syrup

In practice

Stir 1 cup sugar into 1 cup hot water until clear, let it cool and keep it in the fridge for up to a month. Rich simple syrup uses 2 parts sugar to 1 part water and is twice as sweet. It's also called sugar syrup.
