How to make a Mojito
To make a Mojito, build over ice in a highball glass: 2½ oz light rum, 1 oz lime, ½ oz simple syrup, 2-4 mint and 3 oz soda water.

Add mint leaves and simple syrup to a highball glass and press gently with a muddler or the end of a wooden spoon to release the oils and juice.

Fill the glass with crushed ice.

Pour in light rum and lime juice.

Top with soda water.

Give it one gentle stir.
Why build it in the glass? Nothing here needs shaking, and pouring straight in keeps the soda water fizzy.
No simple syrup? Muddle 2 tsp sugar in with the mint leaves instead.

Can I make Mojitos in a batch?
