How to make a Spice 75
To make a Spice 75, shake with ice and strain into a wine glass: 3 oz simple syrup, ½ oz allspice, 6¾ oz rum, 3 oz lime juice and 2 oz champagne. Garnish with orange spiral.

Add simple syrup, allspice, rum and lime juice to a cocktail shaker.

Fill the shaker with ice.

Shake hard for 10-15 seconds, until the outside is frosty.

Strain into a wine glass filled with fresh ice cubes.

Why shake? Lime juice needs a hard shake to mix and chill properly.
