To make a Penicillin, shake with ice and strain into a rocks glass: 2 oz blended scotch, ¾ oz lemon juice, ⅓ oz honey syrup, ⅓ oz ginger syrup and ¼ oz islay single malt scotch.

    Add blended Scotch, lemon juice, honey syrup, ginger syrup and Islay single malt Scotch to a cocktail shaker.

    Fill the shaker with ice.

    Shake hard for 10-15 seconds, until the outside is frosty.

    Strain into a rocks glass filled with fresh ice cubes.

Why shake? Lemon juice needs a hard shake to mix and chill properly.
