How to make a Mulled Wine

To make a Mulled Wine, heat gently and pour into a highball glass: 24 oz water, 12 oz simple syrup, 12 cloves, 2 cinnamon, 25⅓ oz red wine and 2 oz brandy. Garnish with lemon peel.

    Warm a mug by filling it with hot water, then empty it.

    Heat water, simple syrup, cloves, cinnamon and red wine gently in a small saucepan (or the microwave) until steaming, without letting it boil.

    Pour it into the warmed mug.

    Add brandy, adding the alcohol last so it stays in the drink.

    Stir gently.

    Garnish with a lemon twist.

Why heat it gently? Boiling dulls the flavors, and adding the alcohol last keeps it from cooking off.

No simple syrup? Stir 1 cup sugar into the warm drink until it dissolves.
