How to make a Creme de Menthe
To make a Creme de Menthe, make ahead, rest, then serve from a highball glass: 64 oz sugar, 48 oz water, 15¾ oz grain alcohol, 1 oz peppermint extract and ½ oz food coloring.

This is a homemade recipe, not a drink to mix to order: make it ahead.

Heat sugar, water, peppermint extract and food coloring in a saucepan, stirring, until any sugar dissolves.

Let it cool completely.

Stir in grain alcohol.

Seal it in a clean jar or bottle and let it rest somewhere cool and dark for at least a week (longer is smoother), shaking it now and then.

Strain out any solids.

Serve it chilled, over ice or in cocktails.
