How to make a Tia-Maria
To make a Tia-Maria, make ahead, rest, then serve from a highball glass: 8 oz water, 7 oz brown sugar, ⅔ oz coffee, 8 oz rum and ⅔ oz vanilla extract.

Heat water, brown sugar, coffee and vanilla extract in a saucepan, stirring, until any sugar dissolves.

Let it cool completely.

Stir in rum.

Seal it in a clean jar or bottle and let it rest somewhere cool and dark for at least a week (longer is smoother), shaking it now and then.

Strain out any solids.

Serve it chilled, over ice or in cocktails.
