How to make The Galah

To make The Galah, build over ice in a highball glass: 1½ oz dark rum, 1½ oz Campari, ¾ oz Creme De Banane, pineapple juice and lime juice.

You'll need

1 drink

Instructions

  1. 1

Fill a highball glass with ice cubes.

  2. 2

Pour in dark rum, Campari and creme de banane.

  3. 3

Top with pineapple juice and lime juice.

  4. 4

    Give it one gentle stir.

Why build it in the glass? Nothing here needs shaking, and pouring straight in keeps the pineapple juice and lime juice fizzy.

The Galah questions

What does The Galah taste like?

Mostly fruity and tart. It's a medium drink at about 10% ABV once mixed.

How strong is The Galah?

About 10% ABV after mixing with ice, about as strong as a glass of wine.

What's the difference between The Galah and a Bahama Mama?

Both use dark rum, Creme De Banane and pineapple juice. The Galah adds Campari and lime juice, while the Bahama Mama uses rum, grenadine, orange juice and sweet and sour. The Bahama Mama is the stronger of the two.

What can I use instead of campari?

Aperol (lighter, sweeter) will work.

Can I make The Galahs in a batch?

Yes. For 6 drinks, mix 9 oz dark rum, 9 oz Campari and 4½ oz Creme De Banane in a jug and chill it. Pour over fresh ice to serve.

What glass do you serve The Galah in?

A highball glass.
