To make a Midnight Mint, shake with ice and strain into a cocktail glass: 1 oz Baileys irish cream, ¾ oz White Creme de Menthe and ¾ oz cream.

Chill a cocktail glass: fill it with ice and water while you mix, then tip it out.

Add Baileys Irish cream, white creme de menthe and cream to a cocktail shaker.

Fill the shaker with ice.

Shake hard for 10-15 seconds, until the outside is frosty.

Strain into the chilled cocktail glass.
